Fresh Mushroom Salad

Ingredients

ΒΌ lb. fresh small mushrooms
2 Tbsp. minced parsley
2 Tbsp. minced green onion
4 Tbsp. canola or olive oil
1 Tbsp. white wine vinegar
salt if desired
freshly ground pepper
leaf lettuce

Directions

  1. Wash mushrooms.
  2. Drain and dry on paper towels.
  3. Slice mushrooms and combine with parsley and green onions in bowl.
  4. Cover with a damp towel and refrigerate.
  5. Before serving, toss with enough oil to make mushrooms glisten.
  6. Add vinegar, one teaspoon at a time, for desired flavor.
  7. Season and serve on lettuce leaves.
