Ingredients
ΒΌ lb. fresh small mushrooms
2 Tbsp. minced parsley
2 Tbsp. minced green onion
4 Tbsp. canola or olive oil
1 Tbsp. white wine vinegar
salt if desired
freshly ground pepper
leaf lettuce
Directions
- Wash mushrooms.
- Drain and dry on paper towels.
- Slice mushrooms and combine with parsley and green onions in bowl.
- Cover with a damp towel and refrigerate.
- Before serving, toss with enough oil to make mushrooms glisten.
- Add vinegar, one teaspoon at a time, for desired flavor.
- Season and serve on lettuce leaves.
